Some dishes are just essential for winter and this is definitely one I will be permanently adding to it! Relatively easy to make and so very delicious and filling! Best part about this- it's pretty healthy! This was my second time cooking with quinoa and i loved it. I honestly can't believe I stayed away from it for so long- I had no idea how to cook it or what to cook it with- now I know! ;) So go ahead, make life easier for yourself and yummier and try this fabulous recipe! Ingredients:
-2 Cups Chicken broth (i use bouillon cubes)
-1 Cup of Milk (2 %)
-2 Tsp Thyme
-5 Tsp Steak seasoning (i know, sounds weird but i literally put it in everything it's SOOO good)
-1/2 Cup Flour
-2 Cups Water
-1 Can Chicken breast
-1 Tblsp Garlic Powder
-1 Cup Quinoa
-1/4 Cup asiago cheese (or any kind of strong cheese, grated)
-3 Cups Broccoli (cooked and chopped a little smaller)
Instructions:
-Preheat oven to 400* and grease the baking tray/dish (it really sticks to sides so mega grease it)
-Heat chicken broth and milk to boil then lower and whisk in the flour constantly until it becomes smooth
-Add quinoa and water into the mixture then pour into the baking dish, add chicken and coat with cheese
-Pop into the oven for 30 minutes, remove and add broccoli and mix it up a wee bit, coat with a little more cheese if you like and some breadcrumbs, pop back into the oven for 10-15 minutes, take out and eat up!!!!
