DELICIOUS!!! Creamy, Rich & Oh so warming on a cold, cold night! This was my first time making it and the reason behind making it was quite silly- i had planned to make cheddar broccoli soup which my husband LOVES and well... i do too, i have yet to make a mistake making it but as I went to the freezer today to pull out a bag of frozen broccoli... i was shocked- NO BROCCOLI!!! We were away over christmas and so never really got round to doing our BIG grocery shop yet. So we had pretty much nothing in our freezer except a couple bags of frozen cauliflower and corn. My mind stopped and thought "what on earth would cauliflower in soup taste like?" At first i thought YUCK! But then I thought...hmmm you never know until you try it. So off I went- a complete trial run and hoping it would taste good for dinner and it was- very delicious so here it is! Enjoy it! :)
Ingredients:
-(2) 8oz Bags of Frozen Cauliflower
-1 Cup Frozen Corn
-2 cups Chicken Broth
-1-2 Cups Whole Milk (you can substitute this for non-fat)
-1 Cup Cheddar Cheese (sometimes i like to add a little extra cheese to my dishes)
-4-6 oz Velveeta Cheese (chop up small)
-3 Slices American Cheese (broken up)
-1 Carrot grated (much easier to just buy shredded carrots)
-2 Tblsp Cream Cheese
-1 Tblsp Sour Cream
-Seasoning salt, Pepper, Garlic Powder, Garlic Salt
