YUM... what could be better than brie?! NOT MUCH! This easy peezy recipe is perfect with some melted brie. It took barely anytime and was warm and quite filling (disclaimer: this is not for those who may be dieting) haha!
I know i should be starting the 'eat healthier in 2016' blog but... eh...no. This is so much yummier right now lol!
Ingredients:
-1 1/2 Cups Flour
-4 Ounces Cold Salted Butter (cut into cubes)
-2 Tsp Baking Powder
-1 Tsp Salt
-1 Cup Ricotta Cheese (I used whole milk ricotta)
-1 Egg
Instructions:
-Preheat oven to 425*
-In a large bowl, combine all the dry ingredients and mix
-Then add the cubed butter and with your hands, combine butter into the dry mixture until it is well combined (get all those chunks)
-In a separate bowl, combine the ricotta and egg
-Make a hole in the middle of the mixture and pour egg/ricotta mixture in and mix with spoon
-Once it's well mixed, go ahead and roll it onto a floured surface (i use pastry mats- they are amazing and easy cleanup)
-Roll into a rectangle about 3/4 inches and then fold over, then pat into a rectangle shape again and fold another time
-Cut into squares and place onto baking tray
(this makes around 8 square biscuits)
-Bake in oven for 15 mins (or when it starts to brown)
*I also brushed a little egg on top of my biscuits before popping them in the oven
Then enjoy with delicious, melted brie! To do the brie, I cut of a wedge (a giant wedge) made a few fork holes ;) and popped it on a baking tray into my toaster oven and put it on 350* for about 5mins or so (forgot to properly time it, so just keep an eye on it) then take it out and enjoy the crispy coating and the warm melting cheese on top of your biscuits! SOOO good!
