First of all, these things are more like delectable, squishy bars than a cookie but a cookie they look like haha! Also incase you are wondering why I am making all these random treats with bananas... we bought a bunch and of course we never eat them all and they are getting super brown so it's the perfect time to bake with them :)
I don't have a cookie cutter but I have heard great things about cookie cutters... maybe someday i will go buy one. So i am not the best at making cookie shapes, they are a mess...so some turned out bigger than others LOL! But they were very yummy. Next time i think i may try to crush the choc chips a little though...the cookies were small and they were a little too chunky for my liking.
Ingredients
-1/3 Cup Butter (room temperature)
-1 Banana (mashed)
-1/2 Teaspoon Vanilla extract
-1 Cup Flour
-1 Teaspoon Baking Powder
-1/2 Cup Mini Chocolate Chips ( i used big ones- they were too big, stick with small)
Instructions
-Mix together DRY ingredients in a bowl
-Mix together butter, mashed banana, vanilla in a SEPARATE bowl (big one)
-Then add dry ingredients to the mix and mix well (i used electric mixer)
-Place cookies on baking tray (i put them on foil for easy cleanup) set them an inch apart and bake them at 350* for about 10 Mins (keep your eye on them though... time may differ depending on size!)
-THEY ARE DONE.... and delicious with milk... next time i will have them with tea! Best thing is they aren't the worst for you... other than the choc chips there is no sugar and you wont even miss it because the choc and banana taste SO GREAT!
